Turkish cuisine is an ancient collection of tradition changed by the slow march of entering neighbouring cuisines. Western European cuisine contributes cheese-making techniques and vegetables, the use of yoghurt enters from central Asia, and the Middle East contributes the spices. Bread is typical throughout accompanied by beetroot, carrot, cucumber, and eggplant. Olive oil, yoghurt, tahini and hummus complete the meal. Turkish breads are cooked in brick ovens, but the Australian version is frequently cooked over hot coals. Popular dishes include the Doner Kebab, Pilaf, Dolma, and of course when it comes to the sweet stuff, Turkish Delight!

Or Falafel (deep-fried balls made from ground chickpeas and fava beans)? Or Kibbeh (a croquette-like shell filled with finely ground beef or lamb, bulgur, minced onions and spices)? Or Dolma (a flavoursome family of stuffed veggie dishes including vine leaves, peppers, eggplant and zucchini (courgette)? Then you only need to know three words: Meze! (The other two are Menu and Log.) This will bring a family-sized-feast-of-flavours sizzling straight to your own home.
Doner Kebab means ‘turning roast’ and shavings of this succulent meat, grilled on a vertical rotisserie, are served in warm pitta bread, with a salad of chopped tomatoes, lettuce, cucumber, onion and…easy does it…a splash of hot chilli sauce. Or go for the ever-popular Chicken Shish Kebab. ‘Shish’ is Turkish for ‘skewered meat’ and originates from medieval soldiers using swords as skewers to cook over campfires. Marinated Chicken, Lamb or other meats are grilled with chunks of Veggies like peppers, tomatoes and onions, then served with mixed salad in pitta.
